NEW NUT BUTTERS ARE HERE!

Have you ever wanted to make fresh, natural peanut or almond butter...without all of the hard work and fancy appliances?  You're in luck!  We've recently retired our old peanut butter machines and acquired two brand spanking new ones.  Our famous smooth peanut butter is back!  And as an extra special treat, we've added an almond butter machine as well.  The almond butter on Ezekiel english muffins with blueberry jam has become a favourite of staff and our families.

Freshly ground almond butter.  Yum!

So ask us about our fancy new machines the next time you're in.  We just love showing them off and helping customers grind their own nut butters.

RECIPE - Summertime Salsa

It's no secret that summer is a very busy time for most people.  Trying to take advantage of the good weather doesn't leave a lot of time for planning and meal prep.   Luckily we've come up with a recipe that is great for taking to a potluck or mixing up after work as part of a no-fuss dinner.  Nothing says summer like salsa.  Get creative and add chopped cilantro, avocado or hot peppers to the mix.

SUMMERTIME SALSA

2 cups of Organic Meadow frozen corn (thawed)
1 cup of Bandito's medium salsa
1/2 of a can of Eden organic black beans (rinsed and drained)
1 bunch of green onions (chopped or snipped with scissors)
juice of 1/2 a lime or 1 Tbsp of Succo di Limetta 100% organic lime juice
1 bag of Neal Brother's organic blue corn tortilla chips

Combine all ingredients (except tortilla chips) in a bowl and let sit for 30 minutes to 1 hour in the refrigerator.  Serve with chips or add to a burrito, fajita or quesadilla.

ENJOY A BUG-FREE SUMMER

There are a few things that are synonymous with summers in cottage country.  We have Muskoka chairs, white pines, early morning fishing, dinners on the dock, sunsets on the lake...and a hoard of insects that can make all of these things less enjoyable.  Luckily, we've discovered that one of our neighbours here on ol' planet Earth knows bugs like we do, and they have found a non-toxic solution that is safe for kids and the environment.  Best of all, it WORKS!

EcoKid Bug-a-Bug was developed in Australia using certified organic Amazonian botanicals.  It is hypo-allergenic and free of artificial fragrances and colours.  It's also produced using 100% green energy and is not tested on animals.

Our own wonderful customers have tested it all over Ontario, and even in Afghanistan, and have sung its praises.  So whether you're battling mosquitoes, black flies, deer flies or something even more exotic, one thing's for sure: bugs hate this stuff.

PARKING, PARKING & MORE PARKING

Although it's no secret that we have lost the use of the municipal parking lot across the street, it does appear that the new parking spots on Andrew Street are a secret.  Directly across from the store we have three, brand new, metered parking spaces.  So it's just as easy as ever before to make a quick dash into the store to pick up organic household staples or unique gourmet ingredients.

And don't forget that for purchases of $20 or more, we pay the parking!

RECIPE - Gaudaur's Gluten-Free Bread

If you've been noticing more and more gluten-free products on store shelves lately, there may be good reason. Celiac Disease (CD) is a medical condition in which the absorptive surface of the small intestine is damaged by gluten (a protein found in wheat & some other grains). A gluten-free diet is necessary for sufferers of CD.

One recent study (Rubio-Tapia, et. Al, Gastroenterology. 2009 Jul;137(1):88-93.) has shown that undiagnosed CD has increased 4 fold since the middle of the last century. Going gluten-free may help with digestive disturbances, eczema, multiple sclerosis, Parkinson's, cognitive function, seizures, arthritis, osteoporosis, autism, Down's syndrome, diabetes & loss of balance. Eliminating gluten from your diet is no small step, but luckily there are more products and baking alternatives to ease the transition. We have dedicated an entire section of our store to gluten-free products. So come on in and check it out!

If you have a bread maker & an oven, you can make homemade gluten-free bread that is tastier than any commercial brand.

GAUDAUR'S GLUTEN-FREE BREAD

Dry Ingredients:
1 1/4 C brown rice flour
1/2 C sorghum flour
1/2 C rice bran
1/4 C tapioca starch
1 Tbsp powdered egg replacer
1 Tbsp instant yeast
1 T xanthan gum
1 1/4 tsp sea salt
2 Tbsp black sesame seeds
2 Tbsp chia seeds

Wet Ingredients:
1 1/3 C water
2 Tbsp sunflower oil
2 Tbsp McCutcheon's honey (omit to make vegan)
1 Tbsp molasses
1 tsp apple cider vinegar

1. Combine dry ingredients in a large bowl. Mix well & set aside.

2. Put wet ingredients in your bread maker. Select the dough cycle & start it up. After a few seconds start adding your dry mix bit by bit. Use a spatula to keep the mixture off of the sides of the machine.

3. Preheat oven to 350°. At end of dough cycle, put mixture into prepared loaf pan. Bake for 45 minutes (or until loaf sounds hollow when you tab the bottom). The top can get quite dark. Remove from pan & cool on a wire rack. Enjoy!

RECIPE - Protein Bites

It is amazing how delicious 4 simple ingredients can be. This recipe is perfect for a potluck, picnic or if you have to make a dessert for a crowd. Get creative and experiment by adding seeds and dried fruit to your mix. Using puffed quinoa will make the end result chewier, but will boost the protein count.

Ingredients:
- 1 1/2 cups chocolate chips (or carob chips)
- 1/2 cup almond butter or peanut butter
- 3/4 cup brown rice syrup
- 3 cups of puffed rice (crunchier) or puffed quinoa (chewier)

Melt chocolate chips, almond butter & brown rice syrup together in a large saucepan on medium heat. Once melted, remove from heat & stir in puffed rice or quinoa. Mix well with a strong spoon (we prefer wooden ones). Remove from heat and shape into bite-sized balls. Don't wait too long, or your mixture will harden.

Place in resealable container and store somewhere cool or in the refrigerator.
